Carrot cake is cake that contains carrots mixed into the batter. Most modern carrot cake recipes have a white cream cheese frosting. Sometimes nuts such as walnuts or pecans are added into the cake batter, as well as spices such as cinnamon, ginger and ground mixed spice. 



Prep time: 30 minutes
Baking time: 45 minutes
Serves: 4

INGREDIENTS

  1. Grain sugar - 3/4 cup
  2. Sunflower oil - 150 ml
  3. eggs, lightly beaten - no. 2
  4. Grated carrot - 150 gm [ or 3 medium]
  5. Raisins - 100 gm
  6. Grated zest of 1 Large orange
  7. All purpose flour or maida - 1 1/2 cups
  8. Baking soda - 1 tsp.
  9. Ground cinnamom - 1 tsp.
  10. Grated nutmeg [ Freshly grated will give you the best flavour] - 1/2 tsp.

For Cream Cheese Frosting [ optional ]

  1. Unsalted butter, room temperature - 1/2 cup.
  2. Cream cheese, room temperature - 200 gm
  3. Confectioners [ powdered or icing suger ] - 2 cups.
  4. Vanilla extract or essence - 1 tsp.



METHOD

  1. Preheat the oven to 170 degree C.
  2. Prepare two 8-inch round baking pans by lining them with parchment paper.
  3. Beat the suger, oil, vanilla and eggs on mixer until it is a light yellow
  4. In a separate bowl sift together flour, cinnamon, nutmeg, baking soda and salt.
  5. Now to the bowl of wet ingredients, slowly and gently add dry ingredients.
  6. Mix until just combained.
  7. Fold in the Raisins and carrots.
  8. Poure the mixture into the prepared pan and baked for 40-45 minutes. until it feels firm and springy when you press it in center.
  9. Allow the cake to cool completely on a wire rack.
  10. Meanwhile preaper a frosting.
  11. In a bowl of electric mixer beat Cream, Cheese and Butter. on low speed, just until blended with no lumps.
  12. Gradually add the sifted powdered suger and beat, on low speed. until fully incorparated and smooth. Beat in the vanilla extract.
  13. Cover the cake with the prepared cream cheese frosting.
  14. Servw immediately.
