Speaking of Salads, closer to home we have our own kachumber, a mish-mash of freshly chopped vegetables with a simple dressing of lime juice. Not just in india, variation of kachumber are popular in African and Latin American countries as well. Roasted papad adds, the extra crunch factor here. Toss it up for a perfect go-to snack.



INGREDIENTS
For the Dressing
  1. Lime juice - 2 Tbsp.
  2. Olive oil - 2 Tbsp.
  3. Handful of Coriander leaves [ Roughly Chopped ]
  4. Chaat Masala - 1 tsp.
  5. Black salt - 1 tsp.
  6. Green Chillies - no. 2
For the salad
  1. Pineapple [ Cut into small cubes ] - 1/2
  2. Pomegranate kernels - 1/4 cup
  3. Radish [ Thinly sliced ] - no. 1
  4. Onion [ Thinly sliced ] - no.1
  5. Cucumber [ Cut into small cubes ] - no. 1
  6. Tomatoes - no. 2
  7. Ginger [ Grated ] - 1 tsp.
  8. Roasted papad [ Crushed ] - no. 1
  9. Salt to taste
  10. Black paper powder to taste

To Garnish

  1. A few marigold petals

METHOD

  1. For the dressing, mix together the lime juice, Olive oil, coriander leaves, chaat masala, black salt and green chillies in a bowl. Place in the refrigerator for 15-20 minutes.
  2. For the salad, In another bowl, add all the other ingredients followed by the dressing. Ensure that the vegetables are well-coated with the dressing.
  3. Granish with marigold petals and served immediately.
